Spring/Summer Dinner – Veggie Melt

This tantalizing veggie melt is a delicious healthy meal, perfect for days when it’s too hot outside to bake.

Ingredients:

Thick artisan bread (homemade is preferable)

2 cloves of garlic – minced

2 T vegetable oil

1/2 Cup chopped carrots

1 yellow squash – sliced

1/2 white onion – cut into rings

1/2 Cup mushrooms – sliced

1 Cup mozzarella or swiss cheese – grated

5 Tbs fresh parsley – chopped

Instructions:

1. Sautee’ 1 clove of garlic and vegetable oil on ┬ámedium heat

2. Add onion and sautee’ for about 5 minutes or until edges are browned – remove from pan and set aside

3. Sautee’ second clove of garlic with squash on high heat for about 5 minutes or until edges are browned

4.Turn to low heat and add mushrooms – sautee’ until mushrooms are browned evenly

5. Place Slices of bread in casserole dishes – layer vegetables smother with cheese, and top with parsley

5. Broil on high for about 10 minutes

Serve and Enjoy! These are surprisingly filling. Two thick slices filled the hubby – also known as the garbage disposal.
