Rich and Gooey-licious Banana Bread

Summer is finally on its way out, and it’s almost cool enough to turn on those ovens! I was so excited I thought I’d celebrate by publishing my banana bread recipe. I get raves every time I bring this to parties, so I know you’ll love it. I’m not gonna pretend it’s healthy, but hey, at least its got fruit in it right?

Rich and Gooey-licious banana bread recipe


1 cup Shortening

2 Tbsp mayonnaise

2 eggs

1 cup white sugar

1 cup brown sugar (lightly packed)

5 – 6 ripe bananas (mashed)

3 cups flour

1/2 tsp salt

2 tsp baking soda

1 tsp baking powder

3/4 cup chocolate chips


1/4 cup flour

2 Tbsp butter

2 Tbsp brown sugar


1. Pre-heat your oven to 350 degrees and spray down two 9 x 5 inch pans

2. Mix everything together (except for the crumbly) – I know everyone says to mix it a certain way, but I never do. I always just throw it all in, and guess what? I still get LOADS of compliments whenever I bring it to a pot luck or family get together. Pour into your greased pans.

3. In a separate bowl, mix your crumbly all together with your fingers and sprinkle it on top (this step can be done after cooking too – but if you do it before it┬ácaramelizes, yum:)

3. Bake 50 to 75 minutes or until a toothpick inserted into the middle comes out clean. Cool the loaf for about twenty minutes and then take it out of the pan so it can finish cooling.
